SKILLET CAKE OR PAN CAKE NOT A PANCAKE
Pan-cake cake or a skillet cake; a cake cooked stove top or skillet like you would a pancake but with a cake mix. Great for portion control and freshness making it taste even more scrumptious, not to mention a different topping every day.
This Festive Skillet Cake is going to be your new favorite quick sweet tooth fix. Company coming over and you just don’t have time to make a full on dessert? I promise this takes minutes! I tried this a few years back and was hooked. Y’all know I am NOT a kitchen diva. I like smart, simple, sensible and frugal ways. Frugal with my time counts as extra points!
Cake Made Like A Pancake
Pancake Cake
Cake made in a skillet/ frying pan
- Skillet
- 1 box Funfetti Cake Mix
- 1 cup Water
- 1/2 cup oil (can substitute with 1/2 cup plain apple sauce)
- 3 large eggs (can substitute with 1/4 cup Greek yogurt)
Mix well being sure all lumps are gone.
Heat 1 tbsp butter in skillet, to melted and slightly bubbling point
Add 3 tbsp cake mix to skillet per 'cake' depending on size of skillet, you may be able to do more than 1 at a time.
Once air bubbles appear on top and edges – top gently lift edge of 'cake' to check. once lightly browned, turn over
Continue cooking another minute or two until bottom side is also lightly brown.
remove to cooling rack or direct to plate for 'warm' cake.
let sit a few minutes.
Top with Icing, Frosting, Powdered Sugar, Whipped Cream, Ice Cream and Funfetti Sprinkles.
Variations you can try with this box mix pancake.
- Chocolate cake mix with rasberry layers in between, topped with your favorite icing.
- Food coloring and make a pancake cake rainbow.
- Gold Cake layered with Nutella then drizzle with a chocolate ganache.
- Spice cake with an apple jam or canned apple layers topped with vanilla ice cream.
- Lemon cake mix layered with blueberry jam layers topped with blueberry syrup.
- Red Velvet cake mix layered with white chocolate mousse topped with powdered sugar.

Thin Layer Little Layer Cake Alternative
Have you ever had a Southern Little Layer Cake? O.k., well this isn’t that ….. however you can certainly recreate the look feel and pretty danged close to the taste with this recipe. Tell me the truth, were you really going to cut a cake into a 10 layer, 12 layer or even 14 layer cake. Pinky swear? I know almost no one who has the time or sanity to sit and do this!
This technique is so impressive when you make it thin and layer, then trim the edges to a more evenly round cake shape, frost and yikes, your friends will think you lost your spent a lot of time or money having this cake on your table.
Fluffier Pan-Cake Skillet Cake
This is also a pretty danged easy recipe with items that are easily found in your pantry, readily available at stores or borrowed from a neighbor. You heard that right. Borrowed, do any of you kids out there remember the concept of your mom or grandmother borrowing a cup of sugar from a neighbor? It’s a thing, talking to our neighbors, ya know. It’s also quite economical to share items with people in our neighborhoods.
Some occasions call for volume, height (we’re not talking 80’s hairstyles here) for the cake they’re preparing. Maybe you just prefer more surface area to catch the frosting? ME ME ME!
Fluffy Pancake-Cake
A cake cooked like a pancake for smaller portions, more variety in fillings, toppings.
- Skillet or Frying Pan
- 2 cups all purpose flour
- 3/4 cup white cake mix
- 1/4 cup sugar
- 5 tsp baking soda
- 1 tsp salt
- 1 1/2 cup milk
- 1/2 cup vegetable oil
- 2 tsp vanilla
- 2 each large eggs
- 1/4 cup sprinkles
- 2 tbsp sprinkles
In a large bowl, combine all dry ingredients and mix well to combine.
Add in all wet ingredients and stir until there are no clumps. Feel free to use a hand or stand mixer, if you do not, a whisk will work just fine!
Add in the sprinkles last and fold those in.
In a heated pan, drop roughly 3 tbsp of batter. Cook on one side until golden brown and then flip until the pancake is cooked all the way through.
